Crockpot Ham Bone Stew

Yes, I made this video right after Easter.

Yes, I’m aware it is May.

Yes, I also LOVE CROCKPOTS and find them appropriate for quick and easy meals ANY time of the year!

So here’s a little somethin’ somethin’ I whipped up with some leftover ham and ham bones from Easter. You don’t need to have every single ingredient, feel free to improvise. And let this be a moment for me to make a public service announcement to ALWAYS SAVE YOUR LEFTOVER MEAT BONES! (And now let’s take a moment to giggle because that sentence is hilarious to me.)

After cooking a chicken, ham, etc, I always put the bones in a freezer ziploc baggie and pop them in the freezer until I’m ready to use them. You can make bone broth, stew, the skies the limit with these nutritious suckers!

So when your weekend plans get you booked in tight for the next 3 months and you don’t know how you’re going to feed yourself, pull some frozen bones and leftover meat out of the freezer, into your crockpot, and wham bam thank you ma’am  you’ve got din din for the week.

CROCKPOT HAM BONE STEW
Serves: 5-6
INGREDIENTS
  • 1 leftover ham bone
  • ½ yellow onion, minced
  • 2 carrots, peeled and diced
  • 3 stalks of celery, diced
  • 2 russet potatoes, peeled and diced
  • 3 tablespoons minced fresh parsley
  • 2 tablespoons minced fresh tarragon
  • 2 tablespoons minced fresh thyme
  • 3 bay leaves
  • 2 cups cooked and diced ham
  • 64 ounces chicken broth
  • couple small pinches of salt (the ham has plenty of salt so it doesn’t need much)
  • cracked pepper for garnish

DIRECTIONS

  1. Place ham bone in the bottom of a large crockpot. Add all ingredients (except the black pepper) to the pot, cover, then cook for 7-8 hours on low.
  2. Once done cooking, remove the ham bone, shred any leftover ham into the soup and remove the bay leaves. Add in  black pepper, mix to combine and serve up!
  3. ENJOY!
